Syrup going into a Bucket
This is a picture of the end of the line of the evaporator. This is the syrup that was sap, and is being drained into a bucket awaiting the next step. The syrup looks very dark because some of it is the good syrup and some of it is the sappy syrup that still has to be boiled again. They use a sort of cloth filter to strain the syrup into a bucket. The clothes pins hold the filter in place.
The syrup that is left over after this process goes back into one of the front compartments of the evaporator until it is thick enough for the next part of the process. The next part is where Richard takes the syrup into the house and boils it again on the stove and filters it until it is ready to bottle.
