Ready for the Next Step?
This is where Richard MacPhee is using his ladle to see if the syrup that is draining into the bucket is good enough for the next step. If the syrup is thick enough, then it will drain into the bucket correctly. If the syrup isn't thick enough and is still sort of watery, then he will dump the excess syrup into the evaporator to boil some more until it is ready for the next step. The next step is where he takes the syrup into the house and boils it on his stove inside, getting it ready to be put into bottles.
Richard thinks that this form of testing the syrup is the best. Although the temperature gauge is close, it does not attest to the Ladle Test. The ladle lets the syrup drip the correct way.
